Rapid liquid freezing, new possibilities with overwhelmingly freezing speeds

Rapid Freezer is a freezer (alcohol brine freezing) that rapidly freezes food without compromising its quality by immersing the food in a special solution chilled to -30°C. Compared with conventional freezers, freezing times are quicker and food quality loss during freezing is minimised, so that the quality of the food remains the same after thawing as it was before freezing.

Water in food crystallizes into ice as heat is taken away. Liquids freeze about 20 times faster than gases, making freezing with alcohol solutions result in smaller ice crystals and minimal destruction of cells in the food. This ensures good restoration during thawing and the same quality as before freezing.

Food begins to freeze at -1°C and it almost completely frozen at -5°C. If the time required to pass through the maximum ice crystal formation range (the temperature range where ice crystals form) is long, as in slow freezing, the ice crystals will grow larger and destroy the food. The rapid freezing speed of the Rapid Freezer allows passsing through this range quickly, with ice crystals not growing large and remaining small, permitting the food to be frozen without destrying any cells.

Reducing lost of nutrients and flavour

With high-quality freezing that does not damage the cells of foods, even foods that would deteriorate in standard slow freezing retain the same freshness, taste, and appearance as before freezing.

Beef freezing experiment

Purge refers to the loss of water in meat, a "meat juice" that also carries a lost in proteins and vitamins that give juiciness and nutrition to the meat. Liquid Draining Stand exclusively for Rapid Freezer. When removing frozen foods from the cooling tank, they can be used to drain the alcohol solution from the exteriors of bags, to then return it to the tank. They not only improve workability but are also economical, as they reduce the amount of alcohol solution removed from the immersion tank. No tools needed for attachment.
